In una pentola bassa lasciate scaldare l'olio e sciogliere il burro, quindi insaporitevi le verdure e la pancetta finemente tritate.
Aggiungete la carne tritata, mescolate bene e fate colorire a fiamma vivace.
Unite mezzo bicchiere di vino, lasciatelo evaporare.
Salate quanto basta.
Riducete la fiamma e cuocete lentamente per un'ora e mezzo aggiungendo di quando in quando un po' di brodo.
A cottura ultimata potete unire tre cucchiai di panna per rendere il sugo più morbido.

Io prima mi faccio 3 bottiglie di vino rosso, poi prendo una birra rossa e me la schianto in testa
